Job Summary

The Prep Lead is responsible for overseeing the daily operations of the prep team. This role involves assigning tasks, ensuring timely completion of prep work, maintaining food quality and portion control, reducing waste, training new team members, and fostering a positive work environment. The Prep Lead will work closely with the kitchen management team to ensure smooth operations and consistency in food quality.

Essential Duties and Responsibilities:

  • Team Management:

    • Oversee the daily operations of the Prep Team including assigning tasks and schedules to prep team members.

    • Monitor team performance and provide feedback and coaching.

    • Train new team members on food preparation techniques, sanitation procedures, and company policies.

    • Foster a positive and collaborative work environment.

  • Food Preparation:

    • Assist in preparing a variety of food items, including vegetables, meats, seafood, sauces, and dressings.

    • Ensure adherence to standardized recipes and portion control guidelines.

    • Monitor food quality and freshness.

    • Identify and address any issues with food quality or preparation.

  • Inventory Management:

    • Monitor inventory levels of food supplies.

    • Place orders for supplies as needed.

    • Rotate stock to minimize waste.

    • Ensure proper storage and labeling of food items.

  • Sanitation and Safety:

    • Maintain a clean and organized workspace.

    • Adhere to strict food safety and sanitation guidelines.

    • Ensure proper cleaning and sanitization of equipment and utensils.

    • Comply with all local health and safety regulations.

  • Quality Assurance:

    • Conduct regular checks to ensure compliance with food safety and hygiene protocols.

    • Implement processes to minimize waste and maintain consistency.

  • Cost Control:

    • Monitor food costs and identify opportunities for cost reduction.

    • Minimize food waste through proper planning and execution.

    • Work with the management team to develop cost-effective menu items.

  • Training and Development:

    • Train and mentor Prep Team members on proper preparation techniques and safety standards.

    • Develop and maintain SOPs for all pre-production activities.

Qualifications and Skills:

  • Proven experience in a kitchen environment, preferably in a supervisory role.

  • Strong knowledge of food preparation techniques and culinary principles.

  • Ability to multitask and prioritize tasks effectively.

  • Excellent organizational and time management skills.

  • Strong attention to detail and accuracy.

  • Ability to work well under pressure in a fast-paced environment.

  • Strong leadership and communication skills.

  • Food Safety Certification (preferred)

Physical Demands and Work Environment:

  • Ability to stand for long periods of time.

  • Ability to lift heavy objects.

  • Exposure to hot surfaces and sharp objects.

  • Work in a fast-paced, high-pressure environment.
