The Food Production Manager is a critical leadership role, overseeing the entire food production process to ensure efficiency, consistency, and the highest quality in every dish. This role requires a strong leader with a passion for operational excellence, teamwork, and a drive for continuous improvement.
Job Summary
The Food Production Manager is responsible for overseeing daily food production operations, ensuring that dishes meet Akadu Bistro's quality standards while maintaining efficiency and compliance with health and safety regulations. This role bridges the gap between the culinary team and management, ensuring smooth workflows, effective communication, and consistent delivery of exceptional meals.
Essential Duties and Responsibilities:
1. Production Oversight
- Manage and supervise all kitchen operations, from ingredient preparation to final plating and delivery.
- Monitor production schedules to ensure timely fulfillment of orders, including dine-in, takeout, and catering services.
- Ensure that food production processes align with Akadu Bistro’s quality and consistency standards.
2. Team Leadership
- Lead and motivate the Food Production team, including the Executive Chef, Sous Chefs, Line Cooks, and Kitchen Assistants.
- Assign tasks and ensure the team operates cohesively to meet production goals.
- Identify and address skill gaps through training and development initiatives.
3. Quality Assurance and Control
- Conduct regular quality checks during food preparation and before service to ensure dishes meet flavor, presentation, and portion standards.
- Address and resolve any production issues or customer complaints related to food quality.
- Develop and implement quality control procedures to maintain consistency across shifts.
4. Inventory and Resource Management
- Collaborate with the Prep Lead and purchasing team to ensure adequate inventory levels for daily operations.
- Monitor ingredient usage and minimize waste through effective portioning and storage practices.
- Ensure kitchen equipment is well-maintained and promptly address any maintenance needs.
5. Compliance and Safety
- Ensure all food production activities comply with local health and safety regulations.
- Conduct regular inspections to maintain hygiene and sanitation standards in the kitchen.
- Implement and enforce proper food handling, storage, and preparation practices.
6. Continuous Improvement
- Analyze production data to identify areas for improvement in efficiency and cost management.
- Collaborate with the Culinary Innovation team to integrate new recipes and processes seamlessly into production workflows.
- Stay updated on industry trends and best practices to enhance operations.
7. Reporting and Communication
- Prepare and present reports on production metrics, team performance, and operational challenges to senior management.
- Serve as the main point of contact between the kitchen team and other departments, ensuring clear communication and alignment on goals.
Qualifications
Required Skills and Experience
- Education: Bachelor’s degree in Culinary Arts, Food Science, Hospitality Management, or related field (or equivalent experience).
- Experience:
- Minimum of 5 years in food production or kitchen management roles.
- Proven experience leading and managing teams in a high-volume kitchen environment.
- Technical Skills:
- Strong understanding of food production workflows and culinary techniques.
- Proficiency in inventory and resource management systems.
- Knowledge of food safety and sanitation regulations.
